Garlic (10g)
Carrot (100g)
Celery (50g)
Tomatoes (150g)
Vegetable Broth (500g)
Olive Oil (20g)
Salt (5g)

Instructions

Soak the pink beans overnight in water.

Drain the beans and rinse them well.

In a pot, heat olive oil over medium heat and sauté chopped onions and garlic until translucent.

Add diced carrots and celery, cooking for about 5 minutes.

Stir in the tomatoes and cook until softened.

Add the soaked pink beans and vegetable broth to the pot.

Bring to a boil, then reduce heat and let it simmer for about 1 hour or until beans are tender.

Season with salt and pepper to taste before serving.
