    Cook the lentils according to package instructions until tender, then drain.

    Peel and chop the potatoes, carrots, and pumpkin into small cubes.

    In a pan, sauté garlic and ginger until fragrant, then add potatoes, carrots, and pumpkin. Cook until slightly tender.

    In a large mixing bowl, combine lentils, sautéed vegetables, and chopped tomatoes. Mix well.

    Transfer the mixture to a baking dish and press down gently.
