Tomatoes (300g)
Chia (30g)
Ginger (10g)
Garlic (5g)
Lentils (200g)
Carrots (100g)
Tomato Paste (50g)
Vegan Creamer (100g)
Cashews (50g)
Potatoes (150g)
Instructions

Rinse the lentils and soak them for 15 minutes.

In a pot, add chopped tomatoes, diced potatoes, and diced carrots. Cook for 5 minutes over medium heat.

Add minced garlic and grated ginger; sauté for another 2 minutes.

Stir in the soaked lentils and add enough water to cover. Bring to a boil, then reduce to a simmer.

Add chia seeds and tomato paste, letting it simmer until the lentils are tender, about 20-25 minutes.

If using, blend cashews with vegan creamer and stir into the stew for creaminess before serving.
