    In a bowl, mix the buckwheat and chia seeds with water and let it soak for 30 minutes.

    Chop the pumpkin, tomatoes, carrots, and tofu into bite-sized pieces.

    In a skillet, sauté the ginger and garlic (if using) until fragrant.

    Add the veggies and tofu, and cook for about 5 minutes, until slightly tender.

    Combine the soaked buckwheat and chia mixture with the sautéed vegetables.

    Spread the mixture evenly in a baking dish and top with cashews and sesame seeds if desired.

    Bake for 25-30 minutes until the top is golden brown.
