    Preheat the oven to 200°C (400°F).

    Peel and slice the potatoes thinly.

    Finely chop the onion.

    In a frying pan, sauté the onion in a little oil until soft and caramelized.

    In a baking dish, layer the sliced potatoes and caramelized onions, sprinkling Parmesan in between layers.

    Finish with a layer of potatoes on top and sprinkle remaining Parmesan.

    Sprinkle salt and pepper to taste.

    Cover the dish with aluminum foil and bake for 30 minutes.

    Remove the foil and bake for an additional 15-20 minutes until the top is golden and crispy.
